Philosophy
Andrew's approach resists trend. He works closely with a small network of farmers, foragers, and fishermen to build menus around what is genuinely in season — not what is fashionable. The result is food that is direct, precise, and deeply rooted in place. He believes the most honest cooking is the kind that doesn't announce itself.
